Chocolate Eggnog with Rum
Ingredients
- 2 cups whole milk
- 1 cup heavy cream
- 3 oz dark chocolate (70% cocoa or higher), chopped
- 1/4 cup granulated sugar
- 4 large egg yolks
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg (plus extra for garnish)
- 1/4 cup dark or spiced rum (adjust to taste)
- Whipped cream (optional for topping)
- Chocolate shavings (for garnish, optional)
Instructions
Heat Milk and Cream: In a medium saucepan, combine the milk and heavy cream. Heat on medium-low until it’s hot but not boiling.
Melt Chocolate: Add the chopped dark chocolate to the saucepan, stirring until fully melted and combined with the milk mixture.
Beat Egg Yolks and Sugar: In a separate bowl, whisk the egg yolks with the sugar until pale and creamy.
Temper the Eggs: Slowly pour about half of the hot chocolate mixture into the egg yolks, whisking constantly. This prevents the eggs from scrambling.
Combine: Pour the tempered egg mixture back into the saucepan. Stir over low heat until the mixture thickens slightly (about 5–7 minutes). It should coat the back of a spoon but not boil.
Add Flavorings: Remove from heat and stir in the vanilla extract, cinnamon, and nutmeg. Let the mixture cool for about 10 minutes.
Add Rum: Once the eggnog has cooled slightly, add the rum, stirring to combine.
Serve: Pour into festive glasses or mugs. Top with whipped cream and chocolate shavings, then sprinkle a bit of nutmeg on top.
Enjoy Warm or Cold: You can serve this eggnog warm, or chill it in the fridge for a few hours to serve cold.
